Pininyahang Manok literally translates to pineapple chicken. This Recipe calls for chicken slices to be marinated in pineapple juice then stewed with pineapple chunks. Aside from pineapples, secondary ingredients such as carrots, bell pepper, and milk make-up the dish.
There are some variations of this dish and the obvious difference is the use of fresh/evaporated milk over coconut milk or vice versa. I would say that both variations will yield good results though I used fresh milk in this recipe because that is the style that I grew-up eating and it never ceases to give me that nostalgic feeling.

Recipe: Pininyahang Manok (Pineapple Chicken Recipe)
Ingredients
- 2 lbs chicken, cut into serving pieces
- 12 ounces pineapple chunks, canned
- 2 medium sized tomatoes, chopped
- 1 cup bell pepper, cut into thick strips
- 1 medium sized carrot, wedged
- 2 1/2 tbsp fish sauce (patis)
- 1/2 cup fresh milk
- 2 tbsp garlic, minced
- 1 medium sized onion, sliced
- 2 tbsp cooking oil

Cooking Procedure
- Marinate the chicken in pineapple juice/concentrate (derived from the can of pineapple chunks) for 20 to 30 minutes
- Pour the cooking oil in a cooking pot / casserole then apply heat
- Sauté the garlic, onion, and tomatoes
- Put-in the chicken and cook until color of the outer part turns light brown
- Add the pineapple juice/concentrate marinade and fresh milk then bring to a boil
- Add the pineapple chunks and simmer until the chicken is tender and half of the liquid evaporates (about 20 to 30 minutes).
- Put-in the carrots and simmer for 5 minutes
- Add the bell pepper and fish sauce then simmer for 3 minutes
- Remove from the cooking pot / casserole and transfer to a serving dish.
- Serve hot. Share and enjoy!

oo nga mas masarap kc pag patis pinang timpla, but if u want more salty, just add more patis nlang wag na salt pra mas masarap.

Did you use fresh milk or powdered? Sa experience ko in using frsh milk, may possibility na mamuo pero di masyadong compact yung pagkabuo. All I do is stir more para ma-dilute. If powdered milk ang gamit mo, there is a big possibility na hindi na dilute yung milk sa water mabuti kaya namuo.
pwede ba evap milk instead of fresh milk?

I am a working mom here in KSA with a 1 1/2 year old baby girl so no matter how much i want to try all your recipes, i don’t have time and energy. We just came back from our vacation a week ago and i feel more relaxed so i try this one. And you know what, I am so satisfied….. Hi. I been away from the country for sometime now and cooking is my biggest weakness besides sa fact that someone is doing the cooking for us,our very loving manang. So i get used to pre-made food that can be heat up to microwave until i got a chef boyfriend. I was so scared and nervous when he asked me to do cooking for him. Since i got no idea what to do i search on the internet and i found your website all my attention was caught because you make it looks easy and it was easy. You feature almost all my favorite food. I carefully followed your recipe and it turns out to be perfect. Weekly i cook different Filipino food for him and he told me that i am much better chef than him and from that moment on my bf became a fan of Filipino food. I love your recipes.
