Easy Afritada

Easy Afritada is another version of pork afritada.  This recipe will guide you on how to prepare your favorite pork afritada with ease and confidence. My secret for a good afritada recipe, and for any other meat recipes, is the quality of the meat. I see to it that I use the freshest possible meat available. I do this by going directly to the butcher station and request for newly cut or sliced meat, instead of getting pre-packaged meat from the meat section of the supermarket. Another factor that is also related to quality is the texture of the meat. I make sure that the meat is tender and easy to chew. This will make the dish more pleasurable and enjoyable to eat. This can be done by simmering the meat for severalminutes until the desired texture is achieved. The sauces and seasonings  are next on my list. While the meat can be our main source of flavor, sauces and seasonings plays a big role in enhancing the flavor of a dish. I see to it that I only use appropriate sauces and seasonings for the dish. Adding unnecessary ingredients can have a bad effect on any dish – simplicity is the key.

Pork Afritada

Pork Afritada is simply “Stewed pork in tomato sauce”. This dish is similar to Menudo and Kaldereta (or Caldereta) and is usually cooked with wedges of carrots and potatoes. Bay leaves are also added for extra flavor and aroma.Because of the similarity of Afritada to other tomato based dishes, identifying this dish is quite confusing to some.

Pork Afritada

I was asked by some people (who are still puzzled on this topic) to differentiate one from the other. I felt like standing in their shoes for a while. After some time pondering, I figured out that the visual difference can obviously be seen on the cut of the meat and the additional ingredients used. As for the taste, each dish is unique even if the base ingredients are similar. I guess changing the cut of the meat and adding a few more ingredients to it gives me the right to call it “Pork Vanjito” (just kidding).

Some Pinoy Food might look the same but inside them lays a truly unique taste capable of spelling their own name.
