Mamon

Mamon is a popular sponge cake in the Philippines and is considered to be among the top 10 pastries in the country. Unlike other sponge cakes, this amazing creation is individually packaged with serving sizes usually good for just one person. Filipino Yellow Sponge Cake is also another term used to refer to it.

Do you remember where you had your first Mamon? I had my very first Mamon from Goldilocks and I loved it since then. I am just curious, before the extreme commercialization of baked products in the Philippines, would you know as to where this masterpiece first came into being? I believe that there is a single province or city in the Philippines where this pastry first became popular; I’m planning to give that place a visit next month during my vacation to be able to have an authentic Mamon experience.

Brownies with Walnuts

Brownies or Chocolate Brownies refers to slices of flat baked dense chocolate cake. These are usually sliced in squares although some like it in bars.

Brownies come in several forms. What we have here are fudgy brownies with walnuts. Personally, I prefer fudgy or moist brownies over the dry ones because I can enjoy the taste right after the first bite. Also, I can eat this anywhere without having a dry feeling in my mouth.

The walnuts are added to provide extra flavor and texture. The taste of plain brownies tends to be ordinary after having it for a while; adding chopped walnuts makes the flavor rich and interesting. I understand that this ingredient is not readily available in some places. If in case you cannot grab some walnuts, try using pecans, peanuts, or cashews.

Rice puffs or popped rice are grains of rice that are popped and dehydrated. This is often mixed with sweeteners such as sugar or corn syrup and eaten as breakfast cereals. There is a popular snack in the Philippines called “ampaw” which is made from sweetened popped rice.

I’m not planning to post a recipe using rice puffs until I noticed several open boxes of puffed rice cereals that my kids eat during breakfast. You know kids – they want to try every cereal that they see on TV. One box is due to expire in 3 days and I don’t want it to go to waste – so I thought of an idea on how to let my kids consume the rice puff cereal before it becomes stale.

Cassava Cake is a classic Filipino dessert made from grated cassava or manioc, a woody shrub where the starch that is used to make tapioca are derived.

Crema de Fruta

Crema de Fruta is a Filipino dessert elaborately made-up of sponge cake, topped in succeeding layers of sweet syrup, custard, candied fruit (fruit cocktail), and gelatine. A mainstay during Noche Buena and the holidays, this dessert has always been a Filipino Favorite since time immemorial.

Preparing this dessert is quite complicated when compared to others but I can assure that your patience and hard-work will not go to waste. In my case, I started to record the video late in the evening (around 10 pm after arriving from work) and I am so thankful because my wife and kids helped out (or else it will take me forever:)). Also, it gave me a reason to wake-up early the next morning.
