Chicken Bicol Express
Chicken breast slices cooked in coconut milk with chili peppers and shrimp paste.
- 1 lb. boneless chicken breast sliced
- 1 piece Knorr Chicken Cube
- 2 cups coconut milk
- 2 pieces long green pepper sliced
- 5 pieces Thai chili pepper chopped
- 1 thumb ginger minced
- 1 tablespoon bagoong alamang
- 1 piece onion chopped
- 4 cloves garlic crushed
- 3 tablespoons cooking oil
Heat oil in a cooking pot. Saute garlic, onion, and ginger.
Once the onion softens, add chicken and chili peppers. Stir and cook until chicken turns light brown.
Pour-in coconut milk. Let boil.
Add Knorr Chicken Cube. Continue to cook between low to medium heat until the coconut milk reduces to half.
Add bagoong alamang and log green peppers. Cover and cook for 2 minutes.
Transfer to a serving bowl. Serve!
