Adobo Fried Rice

Fried rice cooked using leftover pork adobo.

Equipment

  • Frying pan

Ingredients

  • 1 cup pork adobo see note 1
  • 4 cups white rice see note 2
  • 1 head garlic crushed and chopped
  • Salt and ground black pepper
  • 1/4 cup green onion chopped
  • 3 tablespoons cooking oil

Instructions

  • Heat oil in a pan.
  • Add garlic. Cook until it starts to brown.
  • Add pork adobo. Stir. Cook for 1 minute.
  • Put-in the rice. Cook in medium heat for 3 to 5 minutes while gently tossing every minute to prevent the rice from sticking to the pan.
  • Season with salt and ground black pepper.
  • Add green onions. Toss.
  • Transfer to a serving bowl. Serve. Share and enjoy!

Notes

  • Note 1: Use leftover pork adobo for this recipe. Make sure to slice the pork into smaller pieces.
  • Note 2: Leftover rice is the best choice when making fried rice. It is less sticky compared to freshly cooked rice. I find it best to freeze the rice overnight and thaw it before making my adobo fried rice.
