Bring a pot of salted water to a boil. Add the elbow macaroni and cook according to the package directions until tender but not mushy.
8 ounces elbow macaroni
Add the frozen green peas during the last minute of cooking. Drain the macaroni and peas, then rinse them under cold running water until cool. Drain well and let them sit in the colander for a few minutes so excess water does not get into the dressing.
8 ounces elbow macaroni, 1/2 cup frozen green peas
Combine the mayonnaise, Dijon mustard, sweet pickle relish, pickle juice, salt, and ground black pepper in a large bowl. Stir until well blended.
1 cup mayonnaise, 1 tablespoon Dijon mustard, 2 tablespoons sweet pickle relish, 1 tablespoon sweet pickle juice, 1/2 teaspoon salt, 1/4 teaspoon ground black pepper
Add the cooled macaroni and peas, celery, bell pepper, red onion, cheddar cheese, hard-boiled eggs, and parsley to the bowl.
8 ounces elbow macaroni, 1/2 cup frozen green peas, 1/2 cup celery, 1/2 cup red bell pepper, 1/3 cup red onion, 4 ounces sharp cheddar cheese, 2 pieces hard-boiled eggs, 1 tablespoon fresh parsley
Gently toss everything together until the macaroni and the other ingredients are evenly coated with the dressing. Mix gently so the eggs and cheese keep their shape.
Cover the bowl and refrigerate for at least 1 hour.
Stir gently before serving. Taste and add more salt or black pepper if needed. Serve cold.
1/2 teaspoon salt, 1/4 teaspoon ground black pepper
