Egg Fried Rice

Equipment

  • 1 Wok or large skillet For even stir frying and heat control
  • 1 Mixing bowl For beating the eggs
  • 1 Spatula For stirring and tossing the rice evenly

Ingredients

  • 4 eggs
  • 4 cups leftover rice
  • 1 onion chopped
  • 0.5 bell pepper chopped
  • 3 sweet peppers chopped
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 0.75 cup green onion chopped
  • 0.25 teaspoon salt
  • 0.5 teaspoon sugar optional
  • 4 tablespoons cooking oil

Instructions

  • Crack the eggs into a bowl and beat lightly until smooth.

  • Heat cooking oil in a wok over medium heat. Pour in the beaten eggs and cook until the bottom side turns light brown. Flip, cook the other side, then break into smaller pieces.

  • Add the onion, bell pepper, and sweet peppers. Stir fry for about one minute until fragrant but still crisp.

  • Add half of the leftover rice and stir fry for two minutes to loosen the grains. Then add the remaining rice and continue mixing until well combined.

  • Pour in the soy sauce and sesame oil. Toss everything well so the rice absorbs the seasonings evenly.

  • Season with salt and sugar. Add the green onions and cook for another minute while stirring continuously.

Notes

  • Leftover rice works best for this recipe since it is firm and not sticky.
