- 1 lemon zested and quartered
- 1/2 teaspoon dried thyme
- 1 medium onion diced
- 2 stalks celery chopped
- 1/2 teaspoon ground black pepper
- 1 teaspoon salt
- 1 teaspoon garlic powder
Preheat the oven to 375°F.
Combine the salt, ground black pepper, and garlic powder in a small bowl. Mix well.

Rub the seasoning mixture all over the chicken, including the inside of the cavity.

In another small bowl, combine the melted butter, dried thyme, and lemon zest. Mix well.

Carefully loosen the skin over the chicken breast. Spread the lemon-thyme butter under the skin, distributing it evenly over the breast meat.

Stuff the quartered lemon, diced onion, and chopped celery inside the cavity. Tie the legs together with kitchen twine to hold everything in place.

Place the chicken in a roasting pan. Roast for 60 to 65 minutes, or until the chicken is fully cooked and the thickest part reaches 165°F.

Remove the chicken from the oven and let it rest briefly. Remove the kitchen twine before serving.
