Equipment

  • 1 Heavy-bottomed cooking pot Spreads heat evenly so the halaya cooks smoothly during the long stir.
  • 1 Wooden spatula Scrapes the bottom and sides of the pot as the mixture thickens.
  • 1 Serving container or llanera Holds the finished halaya and gives it a neat, even shape.

Ingredients

  • 1 lbs purple yam grated
  • 1 can condensed milk 14 oz.
  • 2 cups coconut milk
  • 3 tablespoons butter
  • 1 teaspoon ube flavoring
  • 1/2 cup cheddar cheese shredded

Instructions

  • Pour the coconut milk into a cooking pot and bring it to a boil.
    2 cups coconut milk
  • Pour in the condensed milk. Stir until well combined, then let the mixture return to a boil.
    1 can condensed milk
  • Add the grated purple yam and ube flavoring. Cook over medium heat for 30 minutes, stirring continuously to keep the mixture from sticking to the bottom of the pot.
1 lbs purple yam, 1 teaspoon ube flavoring
  • Add the butter and keep stirring. Cook for another 10 to 12 minutes, or until the ube halaya reaches your desired thickness.
    3 tablespoons butter
  • Transfer the ube halaya to a serving container. Spread it evenly, then top with the shredded cheddar cheese.
    1/2 cup cheddar cheese
  • Serve the Ube Halaya with Cheese warm or chilled. Share and enjoy!

Notes

Frozen grated ube – Thaw frozen grated ube completely and drain any excess liquid before adding it to the pot so the cooking time stays on track.
Llanera shape – Brush a llanera or small mold with melted butter, press in the warm halaya, and chill until set for clean slices with the cheese on top.
Storage – Keep the halaya covered in the refrigerator for up to 1 week, or freeze it without the cheese for up to 3 months and add fresh cheddar after thawing.
Scaling – When doubling the recipe, use a wider pot so the moisture cooks off evenly, and plan on a few extra minutes of stirring.
Cheese variation – Grated queso de bola makes a festive holiday topping in place of cheddar.
