Chao Fan

Chao Fan is a Chinese-style fried rice made with ground pork, egg, carrot, and green peas, seasoned with hoisin sauce along with soy sauce and sesame oil.

Equipment

  • 1 Wok A wide, deep pan works too. The rice needs room to move.
  • 1 Spatula For breaking apart the pork and tossing the rice.

Ingredients

  • 6 ounces ground pork
  • 4 cups cold leftover rice
  • 1/2 cup carrot chopped
  • 3/4 cup green peas
  • 1 piece onion minced
  • 1/2 cup green onions chopped
  • 2 pieces eggs beaten
  • 2 tablespoons hoisin sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon garlic powder optional
  • Salt to taste
  • Ground white pepper to taste
  • 5 tablespoons cooking oil divided

Instructions

  • Break apart any clumps in the cold leftover rice before you start cooking. This makes it easier to toss the rice evenly in the wok.

  • Heat a wok over medium-high heat. Add 2 tablespoons of cooking oil. Pour in the beaten eggs and scramble until just cooked. Remove the eggs from the wok and set aside.

  • Add the remaining 3 tablespoons of cooking oil to the wok. Saute the onion until it softens.

  • Add the ground pork. Stir-fry while breaking it apart with your spatula. Continue cooking until the pork is browned and cooked through.

  • Add the hoisin sauce, soy sauce, and sesame oil. Stir until the pork is evenly coated.

  • Add the carrots and cold leftover rice. Increase the heat to high and stir-fry for 2 minutes. Keep tossing while breaking apart any remaining clumps so that the pork and seasonings are evenly distributed through the rice.

  • Add the green peas and green onions. Continue stir-frying for 1 minute.

  • Return the cooked egg to the wok. Toss everything together, then season with garlic powder (optional), salt and ground white pepper to taste.

  • Turn off the heat. Transfer the Pork Chao Fan to a serving plate and serve immediately.

Notes

Rice quantity – Four cups of cooked rice is roughly what you get from 1 1/3 cups of uncooked rice. Cook it the night before so it has time to chill completely.
Wok heat – Let the wok heat until a drop of water skitters across the surface and evaporates before you add the oil.
Scaling – If you double the recipe, stir-fry it in two batches. A crowded wok steams the rice instead of frying it.
Using roast pork – Chopped Chinese barbecued pork (asado) can stand in for the ground pork. Add it along with the rice rather than browning it first, since it is already cooked.
