Notes

Why Leftover Rice is Perfect for Egg Fried Rice?
Leftover rice is ideal for egg fried rice because it’s drier and less sticky compared to freshly cooked rice. When rice cools and sits in the fridge, the grains firm up and lose some moisture, making them less likely to clump together. This drier texture is perfect for stir-frying because it means the grains can separate easily and get that nice, crispy texture without turning mushy. So, using leftover rice not only makes your fried rice fluffier and more delicious, but it also saves you from the dreaded sticky mess!
