Heat the cooking oil in a soup pot over medium heat.

Saute the garlic and onion until the onion softens and turns translucent.

Add the ground chicken. Break it apart and cook for about 5 minutes, until it is no longer pink.

Add the rice noodles. Stir and cook for about 5 minutes, until tender.

Scaling – This recipe doubles easily for a crowd. Use a wider pot and keep the same broth-to-noodle ratio so the soup does not turn thick.Prep ahead – Mince the onion and garlic and chop the scallions earlier in the day so the soup comes together fast at mealtime.Egg-drop variation – For a heartier bowl, stir a beaten egg into the simmering broth in the last minute for soft ribbons.Toasted garlic oil – Save the oil from frying the toasted garlic and drizzle a little over each bowl for extra aroma.
