Finely chop the shrimp and place them in a large mixing bowl.
15 pieces medium shrimp
Add the ground pork, minced onion, sesame oil, egg, salt, garlic powder, and ground black pepper. Mix thoroughly until the ingredients are evenly combined.
1 1/2 lbs ground pork, 1 piece medium yellow onion, 1/2 teaspoon sesame oil, 1 piece egg, 1 teaspoon salt, 1/2 teaspoon garlic powder, 1/8 teaspoon ground black pepper
Lay a wonton wrapper on a clean, flat surface. Place 1 1/2 teaspoons of the pork and shrimp mixture in the center. Fold the wrapper diagonally to form a triangle, then press the edges firmly to seal. Bring the two outer corners inward and press them together. Repeat with the remaining wrappers and filling.
30 to 35 pieces wonton wrappers
Combine the chicken broth and water in a large soup pot. Bring to a boil.
6 cups chicken broth, 3 cups water
Add the rotisserie chicken, including the bones. Cover and simmer over low heat for 20 minutes. Turn off the heat.
1/2 piece rotisserie chicken
Remove the chicken from the pot and let it cool enough to handle. Separate the meat from the bones, discard the bones, and shred the chicken meat.
Turn the heat back on and bring the broth to a gentle boil. Return the shredded chicken to the pot.
Add the prepared wontons one at a time to prevent them from sticking together. Cover and simmer over low to medium heat for 5 to 10 minutes, or until the wontons are fully cooked and the pork filling reaches an internal temperature of 160°F.
Add 2 tablespoons of fish sauce and half of the chopped scallions. Stir gently. Taste the broth and add the remaining fish sauce as needed.
2 to 3 tablespoons fish sauce, 1/2 cup scallions
Ladle the soup into individual serving bowls. Top with toasted garlic and the remaining chopped scallions. Serve hot. Share and enjoy!
