Roasted Chicken Recipe

How about an easy yet tasty chicken dinner recipe? You are in luck because I prepared a simple roasted chicken dish just for you. Although this recipe is simple, it doesn’t mean that the taste is simple too. This tastes better that the ordinary rotisserie chicken, I guarantee.

The thing that I like most about this dish other than the taste is the texture. I believe that the stuffing did a great job in providing moisture to the chicken. If you’ve been to Boston Market and tried their chicken, that pretty much is the texture that I’m talking about – tender and juicy.

I had this with some homemade mashed potatoes and it was a blast. If you wish to enjoy this better, making your own KFC style gravy will do the trick.

Roasted Chicken Recipe

Ingredients

  • 1 whole chicken
  • 4 tablespoons butter, melted
  • 1 piece lemon (grate the skin for zest and quarter remains)
  • 1/2 teaspoon dried thyme
  • 1 medium-sized onion, diced
  • 2 celery stalks, chopped
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon salt
  • 1 teaspoon garlic powder

Cooking Procedure

  1. Preheat oven to 375 degrees Fahrenheit
  2. Combine salt, ground black pepper, and garlic powder then mix.
  3. Rub the mixture around the chicken.
  4. Combine melted butter, dried thyme, and lemon zest and mix well.
  5. Loosen the skin of the chicken and spread the lemon zest-butter-thyme mixture in between the skin and flesh.
  6. Stuff the quartered lemon, celery stalks, and onion in the chicken and secure by tying the legs together using a kitchen thread.
  7. Bake / Roast for 60 to 65 minutes.
  8. Turn the oven off and take the chicken out.
  9. Remove the thread and place in serving plate.
  10. Serve hot. Share and enjoy!

  5. how do I know if the chicken is cooked through?I baked the chicken(abt 3.3lbs) for 60 mins and when I checked it,the inside was still pink and bloody.so I cooked it a lot longer until it started to fall off of the bone.I feel like I overcooked it (took 2 hrs) bec it was not juicy.I was sad it dint turn out well.Was my first attempt to bake chix.really need help!!!

    Can you show in your video how to debone the whole chicken without cutting or bruising the skin and the meat is intact. The skeleton of the chicken must also be intact when it is taken out of the chicken’s meat. What is the best stuff/fillings of the chicken? Thank you so much and more power.

    • Johnson, try to loosen the skin from the flesh in one end by pinching the skin until it separates from the flesh. Work on it using your fingers or a skewer to slowly loosed the remaining skin. You can start on the part near the cavity opening.
