Pandesal or The Bread of Salt (which is also the title of a popular short story written by NVM Gonzales) is probably the most popular bread in the Philippines. This bread is the favorite “agahan” (breakfast food) of most Pinoys (slang for Filipino) and can be eaten plain or with “palaman” (filling).In the Philippines, all bake shops and bakeries sell Pandesal. Sometimes, this is sold in rolling stores(usually a honking bicycle with a big box on the back). When purchasing from a neighborhood bakery, be sure to be there before 8 am because the supply runs out after that time.

Recipe: Pandesal
Ingredients
- 2 cups all purpose flour
- 2 cups bread flour
- 1/2 cup white sugar
- 5 tbsp butter, melted
- 1 tsp baking powder
- 1 1/4 cup fresh milk, warm
- 1 pouch rapid rise yeast
- 1 tsp salt
- 1 cup bread crumbs
- 1 piece raw egg
- 1 tbsp cooking oil

Cooking Procedure
- Combine the yeast, sugar, and warm milk and stir until the yeast and sugar are fully disolved
- In the mixing bowl, combine the dry ingrdients starting with the flour then the sugar, salt, and baking powder . Mix well by stirring
- Add the egg, butter, cooking oil, and yeast-sugar-milk mixture in the mixing bowl with the dry ingredients then mix again until a dough is formed. Use your clean hands to effectively mix the ingredients.
- In a flat surface, knead the dough until the texture becomes fine.
- Mold the dough until shape becomes round then put back in the mixing bowl. Cover the mixing bowl with damp cloth and let the dough rise for at least 1 hour
- Put the dough back to the flat surface and divide into 4 equal parts using a dough slicer
- Roll each part until it forms a cylindrical shape
- Slice the cylindrical dough diagonally (These slices will be the individual pieces of the pandesal)
- Roll the sliced dough over the breadcrumbs and place in a baking tray with wax paper (makes sure to provide gaps between doughs as this will rise later on)
- Leave the sliced dough with breadcrumbs in the tray for another 10 to 15 minutes to rise
- Pre heat the oven at 375 degrees fahrenheit for 10 minutes
- Put the tray with dough in the oven and bake for 15 minutes
- Turn off the oven and remove the freshly baked pandesal.
- Serve hot. Share and enjoy!

You may use active dry yeast April though it does not react right away compared to the other. Bubbles might be produced a little longer when added to warm milk. Make sure that the mixture is bubbly enough before moving on.
how many pieces does this make? when you cut in diagonal how thik should each one be?

all purpose flour and bread flour are the same. I’m confuse about this.Thanks
Emma, they are different. Bread flour has high gluten content compared to all purpose flour. It also contains small amounts of barley flour which helps the yeast and adds elasticity to the dough.
hi kuya, ask ko lang na good idea pa yung before baking ng pandesal eh lagyan ng cornbeef na palaman at least may instant palaman na yung pandesal natin kasi yung bakery sa may amin ganun yung style nila, paano gagawin? salamat po! more power!!!
bhiebe, kamusta na? Ito ba yung meat roll na pandesal? I have not tried that yet using this recipe kaya di kita masasabihan agad na gawin mo itong recipe na ito then add corned beef sa loob – although we can do the ordinary meat roll if you want.

Bread Flour is not available here, but what I see in the shelf is “Pastry Flour”, can we use this as a substitute to Bread Flour?

tried making this and the end result was good pero siksik po hindi naman matigas. gusto ko po na a little fluffy kagaya nang nabibili sa bakery. i used instant yeast instead of rapid yeast.pinabula ko po yung yeast na parang beer kung tingnan. so im still at a lost if talaga bang siksik ang end result or may mali ako sa process. need ur advise po on what to do para medyo fluffy ang pandesal.

Judy, dapat soft ang end result nitong pandesal. Pinapaalsa ko ng mabuti yung dough before baking para maging hollow yung loob.

ok sa next na gawa ko paalsahin ko talaga nang mabuti. check ko din sa pag-bake ko sa oven baka nasa temperature at time kc iba ang oven na gamit ko. yung hindi gas range type. kasi yung ensaymada na gawa ko ganun din medyo siksik pinaalsa ko naman ang dough nang matagal. dapat ma perfect ko ito next time.

hello po! thank you sa pag share ng recipe ng pandesal.. i tried it and it was so tasty! my friends and my son loved it! kaya lang po bakit my dough was very sticky? may kinalaman ba dito ang ginamit kong plain flour instead na all purpose flour? i kept adding flour during mxing but lalo pa nga pong naging sticky.. it wasn’t as firm as yours the video po.. talaga po bang 1 1/4 c milk?

Hi Tito, thanks you sa pandesal na recipe, ginawa namin okey naman medyo matigas lang di kasing fluffy paris ng nabibili mo sa tindihan…isang oras kong pina rise na….me tanong lang ako, pwedi bang tagalan ang patubo ng dough. plus bakit di nagbrown yun top niya, sunog na yun ilalim pero yun top maputla pa or maputi….

Mariden, you can use all-purpose flour if you can’t find bread flour.
I forget to my above question, pwede din bang i freezer itong rest pandedal??? ung di pa na bake o na bake na???? kc maraming kalalabasan nito baka masira lgn i am alone to eat this….????? please let me know teng q mga kababayan…..
Dapat room temperature ang cooked pandesal bago i-freeze. Dapat ay tightly sealed ang plastic bag. Bago kainin ay itransfer mo muna from freezer to fridge ng at least 24 hours. Tapos, painitin sa toaster oven. (based on experience.)

INGREDIENTS ARE:
2 cups warm water
2 teaspoon active dry yeast
1/4 cup white sugar
1/4 cup vegetable oil
1 1/2 TEASPOONS salt
6 cups all purpose flour
about the sugar you can actually taste the dough while kneeding to come up with the sweet taste you want; and if the dough is to sticky feel free to add more flour. nasubukan ko n ito ng ilang beses and it was really soft. kc when i use milk parang hindi siya yung talagang pandesal s atin. i hope it helps,, pro mas importante pa rin n mag rise yung dough.

hikuya, about a month ago ko lang po na discover itong panlasang pinoy nung nag search ako ng pandesal recipe kase na miss ko po ang pandesal sa atin. I´m living here in Sweden at nahiligan ko po ang mag bake kase wala naman po akong pinagkaka abalahan dito. Di ako makapaniwala na nakapag bake ako ng pandesal at ang sarap talaga! Gustong gusto po sha ng hubby ko at ng aking mga friends dito. Salamat po ulit for sharing the recipe.

i am no cook and i believe i don’t have the “cooking gene”. because of your videos, i’ve learned a lot and gaining some confidence in cooking. thank you po sa recipe. iba talaga ang pandesal kaysa sa ibang tinapay. it brings back good memories of home for me.
my question is that you used cheesecloth or “katsa” to cover the dough. does it need to be moist or just dry? do i have to spray the bowl with oil when i let the dough rise?

Hi ikabod, I covered it with cheese cloth to maintain the temperature. No need to spray the bowl with oil, just follow everything in the recipe and video and you are good to go. Hope this helps.

After trying my hands on the ensaymada, chicken empanada and siopao asado recipes (they all came out well, although sabi ng wife ko kailangan ko pa daw kapalan ‘yung dough ng siopao tapos she prefers na medyo i-shred ko ‘yung chicken breast instead of cubed para sa empanada), susubukan ko naman ang pandesal. My daughters loved the ensaymada so much that I prepared the dough uli kanina. Maraming salamat sa Panlasang Pinoy for making these Filipino recipes available in an easy-to-follow format. I finally tried making pandesal this evening and it turned out ok. Medyo dinagdagan ko lang ‘yung sugar and the sizes varied from small to large, pero masarap. Maraming salamat for the recipe. Godbless!
