Shared Recipe. Pork Ribs Maskipaps

This is a shared recipe from Ging D.

“Maskipaps” is short for “maski papaano” which also means “however”. When I cook something that I have no known name for, I just call it “maskipaps.”

This recipe is actually my mom’s. She uses pork belly so it is even tastier and juicier. Pork belly is not available in our local supermarkets so I used ribs instead.

This quick and easy pork recipe is so appetizing — no wonder my kids love them.

Ingredients:

2 lbs. pork ribs

5-6 cloves garlic (or more)

1 tbsp sea salt

1 tsp black peppercorn

1/2 tsp ground black pepper

2 laurel leaves

5 tbsp vinegar (or more)

1/2 cup oil

water

Procedure:

1. Combine all the ingredients in a deep pan (except for cooking oil). Pour enough water to cover the ribs then bring it to a boil.

2. Simmer until the water is reduced to almost nothing.

3. Add oil to fry the ribs.

4. Remove from the pan when the ribs turn golden brown.

5. Serve with hot & spicy Lechon Sauce.
