Cheesy Crab and Corn Nachos is a perfect appetizer especially if you are out for a drink or two. It is cheesy, very tasty, and has a little bit of spice that will tickle your taste buds. I like to consume it while it is still freshly hot from the oven.

Cheesy Crab and Corn Nachos Recipe

Making your own cheesy crab and corn nachos is easy. The process is composed of two parts: the sauce, and the nacho arrangement and baking. I started to make the sauce by melting butter in a saucepan. Make sure to limit the heat to medium to prevent the butter from getting burnt. You see, butter has a low smoke point (low tolerance to heat), it can get burnt quickly if not properly handled.

Next is to add the all-purpose flour gradually in the sauce pan with the butter. Do this while stirring in order for the two ingredients to mix properly. You’ll notice that the flour absorbs the butter creating a lump. That is normal.Continue stirring for a minute and then gradually pour fresh milk in. The lump will suddenly be diluted in milk. Continue to stir until the texture becomes smooth and add the chopped tomato and chili, cheese, salt, and cayenne pepper. Not that hard, is it? You now have made yourself a cheesy sauce for the nachos.

Cheesy Crab and Corn Nachos

It is time to arrange the blue corn tortilla chips in a baking plate. It’s okay to use other colors of corn tortilla if blue is not available. I just like using blue to distinguish this from regular nachos – because it is special. Top the chips with fresh crab meat and corn alternately. The crab meat can be purchased fresh from the seafood section of your supermarket. The corn kernels that I used are the one’s in can. I just drained the water. Top with the cheesy sauce that you just made and cover it with more shredded cheese. Bake and you are done. Top with chopped spring onions. You can also add sour cream if preferred.

Ingredients

  • 1 large bag blue tortilla chips
  • 1 lb. fresh crab meat
  • 1 cup whole kernel corn canned
  • 1 cup shredded sharp cheddar cheese
  • 4 tablespoons cup green onion chopped

Cheese sauce ingredients

  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup all-purpose flour
  • 2 cups fresh milk
  • 1 10 oz. can chopped tomato with green chilies, drained
  • 1/4 cup butter
  • 1/4 teaspoon salt
  • 1/8 teaspoon cayenne pepper powder

Instructions

  • Prepare the cheese sauce by melting butter in a sauce pan.
  • Stir-in flour. Cook in medium heat while gently stirring for 1 minute.
  • Gradually pour water. Continue to stir until the texture becomes smooth.
  • Add tomato with chilies, cheese, salt, and cayenne pepper. Stir until all ingredients are well blended. Set aside.
  • Preheat oven to 375F
  • Arrange the blue corn tortilla chips over a baking dish or tray. Alternately arrange crab meat and corn. Pour the cheese sauce over and then top with cheddar cheese.
  • Bake for 9 minutes.
  • Remove from the oven and top with green onion.
  • Serve. Share and enjoy!
