Spicy Calderetang Kambing with Peanut Butter or Goat Meat Caldereta is a type of Filipino stew wherein chevon (goat meat) is cooked in tomato base along with vegetables such as peas and capsicum. There are many versions of caldereta (also spelled as Kaldereta) in the Philippines. This particular one makes use of peanut butter.

Spicy Kalderetang Kambing with Peanut Butter

Calderetang kambing can be enjoyed as a main dish or as a “pulutan”. The latter refers to food being consumed along with alcoholic beverages. I love to have spicy pulutan dishes. It is the reason why I made this dish spicy.

Preparing goat meat is a bit challenging compared to either pork or beef. It has an unpleasant smell (we refer to it as Maanggo) that needs to be neutralized —  or reduced, at least. There are many ways to do this, some will try to boil the goat meat with ginger and tamarind, while others will soak the meat in vinegar. All these method will work, but there will be chemical reaction. This can take away the natural flavor of the meat. Since I am trying to reduce the unpleasant smell without affecting the taste of the meat, I marinated this in buttermilk with chopped fresh ginger overnight.

Panlasang Pinoy Spicy Calderetang Kambing with Peanut Butter

I grew up eating Metro Manila’s version of Caldereta. It involves the use of liver spread. This recipe is special because this is the first time that I will be sharing caldereta with peanut butter. I must say that the result was good and I enjoyed it a lot. I’m now off to trying different caldereta version from every region in the Philippines.

Ingredients

  • 4 lbs. goat meat chopped
  • 6 to 8 pieces Thai chili pepper
  • 3/4 cup green peas
  • 1 red bell pepper sliced into squares
  • 1 green bell pepper sliced into squares
  • 10 tablespoons peanut butter
  • 1 6 oz. can tomato paste
  • 1 8 oz. can tomato sauce
  • 1 medium onion chopped
  • 4 cloves garlic crushed
  • 2 cups beef broth
  • 3 tablespoons cooking oil
  • Salt and ground black pepper to taste

Instructions

  • Heat oil in a pot.
  • Saute garlic, onion, and chilies for 3 minutes.
  • Add goat meat. Saute until light brown.
  • Add tomato paste and pour tomato sauce. Stir.
  • Pour beef broth. Let boil. Cover and cook between low to medium heat for 90 minutes or until tender.
  • Add peanut butter. Stir to ensure that all ingredients are well blended.
  • Add salt and ground black pepper.
  • Stir-in green peas and bell peppers. Cover and cook for 8 to 10 minutes.
  • Transfer to a serving plate. Serve.
  • Share and enjoy!
