Chicken Macaroni Salad

Chicken Macaroni Salad is a simple salad made from macaroni (usually elbow macaroni).  This salad is prepared with a generous amount of mayonnaise and boiled chicken meat (sometimes ham is used). A regular side dish during picnics and family outings, macaroni salad is best if combined with grilled foods and barbeque.

Recipe: Chicken Macaroni Salad

Ingredients

  • 16 ounces elbow macaroni, cooked
  • 1 lb boneless chicken breast, boiled and cubed
  • 1 ½ cup pineapple chunks
  • 1 cup Spanish onion
  • 1 cup raisins
  • 3 hard boiled eggs, chopped
  • 2 cups mayonnaise (can be 1 cup mayo and 1 cup miracle whip)
  • 1 ½ cup Cheddar cheese, cubed
  • 2 teaspoon salt
  • 1 teaspoon pepper

Cooking Procedure

  1. Cook the macaroni as directed in the package
  2. Place the macaroni in a large container
  3. Add the mayonnaise (and /or miracle whip) and mix well
  4. Put-in the minced onions and mix well
  5. Place the cheddar cheese in and mix again
  6. Now, add the chicken and distribute evenly
  7. Put-in the pineapple chunks, boiled eggs, and raisins and mix well
  8. Add salt and pepper to taste
  9. Chill inside the refrigerator for about an hour
  10. Serve chilled. Share and enjoy!

    another variation we can do is to add fruit cocktail and condensed milk- to taste lang pra di masyadong matamis ang lasa…try nyo!

    Pwede po bang mag request ng recipe ng boullabaisse mix seafood po ito, sa barrio fiesta ko po natikman ito. paki email naman po sa akin or publish nyo na lang sa panlasang pinoy. maraming salamat po!!! By the way marami na po akong natutuhan sa mga recipe nyo tuwing ako ay magluluto, tumitingin po ako ng menu sa panlasang pinoy. mabuhay po kayo. nandito po ako sa atlanta, georgia. salamat po ulit.

    hi!Vanjo kamusta ka na? maraming salamat sa panlasang pinoy recipes mo araw araw akong tumitingin ng mga video recipes mo.katunayan niluto ko yung nakita kong fish escabeche at nasarapan kami ng family ko.mahilig din akong magluto.tanong ko lang pwede ba akong mag request ng recipes books mo?kc gusto kong makita ang lahat ng klase ng mga lutuing kakanin o mga pang meryenda.anyway thanks sa panlasang pinoy,god bless and more power.

    Salamat sa Panlasang Pinoy, ok yung cassava cake na ginawa ko. Yung crema de fruta ko hindi masyado, sabi ng hubby ko naging pudding yun sponge cake. LOL! Ano kaya mali, sinunod ko naman lahat.

    Just a little twist on it. Pwede mo ring gamitin yung pinag pakuluan mo ng manok para lutuin yung elbow mac. This will give the macaroni a good taste of chicken! You can also try to use LadysChoice Sandwich spread instead of miracle whip combined with the regualar mayonnaise. Again, thank you for all your efforts in putting this all up.     hay naku Vanjo, dapat nag chef ka na lang talaga ;) ))) super chef kn sa hollywood!
    napahilig ulit akong magluto esp. simula nung maybahay na ako, almost everyday im browsing ng PP at pinaplano ko na ahead ang menu for two of us ng asawa, mukhang pinoy na ang taste nya pati ang family nyang bumibisita sometime at weekend. pinaproud pa ng asawa ko ang mga luto ko hehehe, if they asked where i learnt, sabi ko syempre sa sariling amin – panlasang pinoy ( filipino taste)!
    Sometimes, ang hirap din hanapin ang mga ingredients here sa France grabe, pero go go pa rin ang pagluluto!
