Meatloaf is a dish made from ground meat (usually combined ground beef and pork) and formed into a loaf. Aside from the meat, different vegetables and spices are added to provide additional flavor. This dish is typically baked but slow cooker and microwave oven are sometimes used.
Almost all the countries in the world have their own meatloaf variation (Embutido is considered as the the local meatloaf of the Philippines). This traditional Meatloaf recipe is considered as one of the top comfort foods here in the Midwest.
Try this Meatloaf recipe.
Ingredients:
2 lbs ground beef
1 cup Italian bread crumbs
1 cup onion, minced
1 cup celery, minced
2 teaspoons Worcestershire sauce
1 teaspoon garlic, minced
1 teaspoon salt
1/2 teaspoon pepper
6 ounces tomato paste
1 teaspoon mustard powder
2 pieces raw eggs
1 cup tomato ketchup

Cooking procedure:
1. Combine the ground beef, minced celery, and minced onions in a mixing bowl then mix well.
2. Add the eggs, minced garlic, bread crumbs, salt, ground black pepper, worcestershire sauce, mustard powder, and tomato paste then mix all the ingredients together
3. Transfer the mixed ingredients in a loaf pan.
4. Spread the ketchup evenly on top of the meatloaf
5. Preheat oven to 350 degrees Fahrenheit and bake for 75 minutes
6. Remove from the oven and transfer to a serving plate.
7. Serve. Share and enjoy!

I tried this recipe last night. I was having second thoughts before I did it because I am not a fan of embutido. Since I couldn’t really picture out the outcome of this recipe and haven’t really tried a homemade meatloaf…I decided to give it a shot.
And I was happy with the result! It’s actually yummy! Just in time for Easter!
Though I made some alterations. I read from an article that we can use oatmeal when the recipe calls for bread crumbs, to make it healthier…so I did. And since your recipe needs italian bread crumbs, I added in 1/2 tbsp of italian seasoning. Also I added half cup of grated carrots which was left over from the carrot cake I made the other night.
The recipe was simply fabulous…same with your carrot cake…a winner!

Toni, did you place the eggs and bread crumbs in? These ingredients serve as binders which keeps the meat from falling apart. If you did, maybe you need to mix it thoroughly.
