Ginataang Manok with Kalabasa is a simple Filipino chicken dish wherein chicken slices are cooked in coconut milk along with squash and malunggay leaves. This healthy dish is quick and easy to make. A friend told me once about a traditional belief that eating chicken and kalabasa in a single dish can cause leprosy. I find this belief absurd. It is unsupported by facts and there is no evidence linking the food combination to the disease. This is probably one of the “Sabi ng matatanda” beliefs that people respect. You might say, “wala namang mawawala sa atin kung susundin”. Fair enough, but I think that we should question the status quo if something does not make sense. I’m not sure with you, but I think that this belief should not restrict you from tasting and enjoying something good, such as this dish.
How to Cook Ginataang Manok with Kalabasa
I love to develop easy recipes for beginners. Aside from my advocacy of making Filipino food known to the world, I also want non-cooks and people who are just starting to cook to realize that cooking is a skill that can be developed. You all should know that anyone can cook.
The first step in cooking ginataang manok with kalabasa is to pan-fry the chicken pieces. Simply heat oil in a pot and pan-fry each side for 2 minutes. Remove the chicken from the pot and set it aside. The chicken will be added back soon.
The next step is sautéing onion and garlic. Make sure that the onion softens completely while the garlic should be browned a bit. Add the chicken back to the pot and stir.
Prepare the gata mixture buy combining Knorr Ginataang gulay Recipe Mix with 1 1/2 cups water. Mix well until the powder is diluted. Pour into the pot and cook in medium heat for around 25 minutes. You may cook it longer if desired. Make sure to add water if the liquid starts to dry-up quickly. I like to use the recipe mix because it is already pre-mixed with seasonings. This means that I don’t need to add salt and pepper later. This makes it perfect for beginners.
Add kalabasa and cook it for around 8 minutes. You may also cook it for up to 12 minutes if you want it soft. The malunggay leaves goes in last. Give it around 2 minutes to cook. You have now completed cooking the dish.

Ginataang Manok and Kalabasa
This is a recipe for Chicken and Butternut Squash in coconut Milk.
- 2 lbs. chicken cut into serving pieces
- 2 1/2 cups kalabasa (squash) cubed
- 1 pack Knorr Ginataang Gulay Recipe Mix 40g
- 3/4 cups malunggay leaves
- 1 piece onion chopped
- 4 cloves garlic chopped
- 1 1/2 cups water
- 3 tablespoons cooking oil
- Heat oil in a cooking pot.
- Once the oil gets hot, pan fry the chicken for 2 minutes per side. Remove from the pot. Set aside.
- Saute onion and garlic using remaining oil until the onion softens.Put the chicken back into the pot.
- Make the gata mixture by combining Knorr Ginataang Gulay Mix and water. Stir until the powder completely dilutes. Pour the gata into the pot. Let boil. Cover and for 25 minutes using low to medium heat. Note: add more water if needed.
- Add kalabasa. Cover and cook for 7 to 8 minutes.
- Add malunggay leaves. Stir and cook for 2 minutes.
- Tranfer to a serving bowl. Serve. Share and enjoy!
