As many might have noticed, coconut milk plays a huge part in Filipino cuisine. Different Filipino or Pinoy recipes require the use of coconut milk and coconut juice. I think that this is a good thing because we are making the most out of what is abundant to us but let’s keep in mind that there are some people that still need to develop their taste buds for these types of dishes. Don’t be afraid to try if you are one of those people. It just takes a few baby steps to get there; it’s time to experience the great taste that you are missing.

California Roll Recipe

California Roll or California Maki is a sushi roll that is made inside out. Crabstick, avocado, and cucumber are placed in the center of the nori while the flattened sushi rice with sesame seeds is on the opposite part. This is then rolled using a bamboo mat and pressed to maintain the shape.

Though sushi is a traditional Japanese food, California Roll was first made in Los Angeles, California in the late 60’s and became popular from then on.

So why feature a foreign food? Well, Filipinos are very flexible people. We can adapt to anything easily and get used to it if done all the time. Same goes with our palate and food preferences, it ceases to be foreign once it becomes a part of us.

Atchara (Papaya)

Atcharang Papaya

Atchara is an appetizer made from pickled green papaya. Julienned or grated green papaya are placed in airtight containers and soaked for a week in cooked vinegar and sugar mixture with onions, garlic, ginger, pepper corn, and red bell pepper.

This is probably the most famous appetizer in the Philippines because every region seems to have their own version. This sweet and sour tasting appetizer is usually served with fried dishes such as fried tapa, longganisa, tocino, and even lechon manok. In addition, this can also give life to dull dishes.

Crab Meat Omelette

Crabmeat Omelette is a type of beaten egg preparation with crab meat. This is lightly fried using butter or oil. In the Philippines, this type of dish is referred to as “torta” and several different ingredients can be added with the egg. The more traditional method of preparation is adding the crabmeat (or any ingredient that takes a short time to cook) with the eggs while whisking. The eggs and crabmeat will then be poured in the pan and be cooked at the same time.

There are many ways to cook an omelette and several ingredients can be mixed and matched. All we need is a little imagination and a good understanding on how each ingredient affects the taste of the entire dish. It’s always good to experiment.

Grilled Isaw or Inihaw na Bituka ng Baboy is pig’s large intestine boiled until tender then grilled. This is probably the most sought and most popular street food in the Philippines.

This food goes well with beer or liquor and has earned the reputation of being the best affordable pulutan (appetizer).

Buchi Recipe

Buchi or Butsi is a rice cake made from sweet rice flour that is molded into shape with a sweet bean paste filling and sesame seed coating. This delectable treat is deep fried under high heat before serving.

The most famous establishment that serves this in the Philippines would be Chowking . It is a Chinese fast-food chain owned by the largest local fast-food company in the Philippines, Jollibee corp. I remember ordering buchi as a dessert after having some Siopao Asado. It really tastes great especially when you have the gulaman drink by your side.

There are several types of filling that can be used for Buchi. The most common is the sweetened red bean paste while the ube and condensed milk mixtures are also becoming popular. You may use any filling that you want as long as it suits your taste.

Cashew Chicken Recipe

Cashew Chicken

Cashewed Chicken is an Oriental dish that definitely fits the Filipino Palate. Thinly sliced chicken breast is coated with egg and cornstarch then stir fried until crispy and golden brown. An array of colors brought about by the different vegetables makes this dish more appealing. Let’s not forget the roasted cashew nuts that adds flavor and texture to the dish.

Chili Crab Recipe

Chili Crab

Chili Crab is a seafood dish that originated from Singapore. This dish is composed of crab (Mud Crab is originally used) cooked in sweet and spicy sauce.

I had my first taste of this dish in the original dampa in Paranaque (a city in the Philippines). I found this to be real good and the three servings of rice can attest to that. Imagine the meaty claws of the alimango topped with sweet and spicy sauce …now that makes me really craving for more. Wouldn’t you want to try some or perhaps cook your own chili crab? Easy Steamed Fish Recipe

Steamed Fish - Grouper

Steamed Lapu-Lapu is Steamed fish (particularly Grouper fish) stuffed with lemon and ginger with sweet lemon-ginger sauce.

Though simple, this recipe is beneficial to your health. Fish is a low calorie food that is also low in fat. Recent studies also concluded that eating fish regularly can cut the risk of death from heart disease by a third. There were even studies claiming that eating fish can lessen the risk of Prostate Cancer, Depression, and Inflamation (Omega 3 fatty acids are regarded on this).

Pichi-Pichi Recipe

Pichi-Pichi is a gelatinous dessert (this can also be eaten as a heavy mid-afternoon snack) made from grated cassava and sugar. The concoction is placed in a mold and steamed until a sticky-gelatinous texture is formed. After steaming, this is coated with grated coconut for additional flavor.

It was not until a few years ago that I was able to try Pichi-Pichi. This is usually ordered in our workplace on special occassions along with Pinoy Style Spaghetti and Pork Barbeque (these are grilled pork slices in skewers). I liked it because the taste is not too sweet and it fills me up fast.

The cost of this recipe won’t hurt your wallets. For the business minded individuals, you can start a food business by selling Pichi-Pichi with the other foods featured here in Panlasang Pinoy. Let’s remember that it is good to fill our stomach but it will even be better if our wallets are filled at the same time.

Garlic Fried Rice

Garlic Fried Rice or Sinangag is steamed rice fried with lots of garlic. This is a favorite side in the Philippines and most of Asia since rice is considered as the staple food.

Usually considered as a breakfast food for Filipinos, this way of cooking rice goes well with several fried foods such as Tocino, Longganisa, Beef Tapa, Tuyo, Daing, Danggit. Also, Beef Pares won’t be complete without this.

For people who are not really familiar with rice but want to try this method of cooking, please be sure to use steamed rice (cooked rice). You could buy or purchase raw white rice (such as Jasmine) in your local grocery store (it is usually in the Asian or Mexican isle). Rice cooker is the best kitchen equipment to use for this (specially for newbies). However, if you are well versed in steaming rice using a cooking pot then that would be better. As an additional note, instant or microwavable rice is not recommended for this recipe.

Champorado Recipe

Champorado is a sweet chocolate rice porridge that uses sweet glutinous rice (locally known as malagkit) and cocoa powder as main ingredients. A more traditional approach would be using tableya (pure cocoa blocks) instead of cocoa powder.

This porridge can be served hot or cold and is mostly eaten during breakfast. This can also be served during mid-afternoon snacks (meryenda) and is best when complimented with Tuyo (salted dried fish).

In this actual presentation, I used special dark chocolate (the only available ingredient in my kitchen) instead of the ordinary cocoa powder . This made the color of the Champorado darker…don’t be alarmed when the color of the champorado that you are cooking is brownish because that is the way it should be. I’m just trying to save some money by using ingredients that are directly available . You should do the same thing too 🙂

Kutsinta Recipe

Kutsinta or brown rice cake is a type of “kakanin” that uses lye water as an ingredient. Kutsinta is somewhat sticky yet chewey (thats what lye water does) at the same time and is best eaten with grated coconut on top.

This recipe requires minimum effort and the procedures are so easy to follow. If your thinking of making something for merienda, this would be a very good recipe worth trying.

Ensaymada Recipe

Ensaymada is a Filipino sweet pastry. This is said to be a variation of the Ensaimades, a similar bread that uses pork lard as an ingredient that originated in Majorca (the largest island of Spain).

In the Philippines, this pastry can be bough in any neighborhood bakery and the well know bakeshop chains as well. This is one of my favorite mid-afternoon snack and I usually have it with brewed coffee.

Max’s style Fried Chicken

Max’s style Fried Chicken is a recipe close to the very popular and delicious Fried Chicken dish served by Max’s Restaurant.

This Fried Chicken dish is served with fried kamote (sweet potato) and best eaten with Jufran banana catsup or worcestershire sauce. To make your dining experience more realistic, you can serve Lumpiang Sariwa and Pancit Canton along with it.

Lumpiang Sariwa (Fresh Spring Rolls Recipe)

Lumpiang Sariwa or Fresh Spring Roll is a vegetable dish composed of different vegetables with a soft (unfried) wrapper garnished with sweet sauce and crushed peanuts. Some popular variations of this dish are lumpiang ubod (made with heart of palm) and lumpiang hubad (Unwrapped lumpiang sariwa).

Tasting this dish makes me remember the Lumpiang Sariwa that my mom makes.

Cheese Sticks

Cheese sticks are deep-fried snacks composed of sliced cheeses wrapped in spring roll wrapper. This is totally different from the cheese sticks that they have here in North America wherein cheese (usually Mozzarella) is coated in a batter and deep-fried.

A great meryenda (mid-afternoon snack) for the kids and kid at heart, this snack is so easy to prepare and is a total budget friendly meal.

Inihaw na Liempo Recipe (Grilled Pork Belly)

Inihaw na Liempo or Grilled Pork Belly needs no introduction at all. The name of the dish already defines itself. This is one good food that I really like because of its simple preparation and magnificent taste.

I love eating liempo the “kamayan” way. I just make sure that my hands are all clean and that the suka (vinegar) and ensalada (salad) is within my reach.

Kamote Cue Recipe (Deep Fried Caramelized Sweet Potato)

Kamote Cue

Kamote Que is deep fried sweet potatoes with a coating of caramelized brown sugar. This is a common meryenda (mid-afternoon snack) in the Philippines and can mostly be seen peddled around the busy streets.

I would say that Kamote Que is one of the top selling meryenda because of its affordability and filling effect (it can make you feel full for several hours). This can also recharge your energy temporarily (carb and sugar combined makes you hyper active).
