Danggit Fried Rice

Danggit Fried Rice is a simple fried rice version composed of garlic, cooked white rice, and chopped dried danggit, which is also known as rabbitfish. I must say that this is a very tasty fried rice version that you can eat with other fried Filipino breakfast favorites such as tocino, longganisa, or what have you.

Danggit Fried Rice Recipe

As for me, I thought of having this with fried eggs at first. However, I just remembered that I had danggit silog the other day. Not that I am picky, but I want my meal to be a bit different. So, I decided to eat this the way I enjoy pancit habab best – with spicy vinegar. Danggit fried rice is already a meal by itself. Adding a few drops of vinegar made it taste better. How simple can it get?

I think that this fried rice version is also perfect when eaten with steamed or fried fish. I was able to try this with steamed and fried tilapia before, and I enjoyed both meals. Filipino omelet is another dish that I think is a best fit – you know – scrambled eggs with tomato and onion.

Danggit Fried Rice

This is a recipe for danggit fried rice. Danggit is a variety of dried fish.

Ingredients

  • 3 cups cooked white rice preferably leftovers
  • 5 pieces uncooked danggit chopped
  • 2 teaspoons minced garlic
  • 3 tablespoons cooking oil
  • 1 tablespoon chopped green onion

Instructions

  • Heat oil in a wok.
  • Once the oil starts to get hot, add the garlic. Cook for 10 to 15 seconds.
  • Add the chopped danggit. Stir-fry until the garlic turns light brown.
  • Put the rice in the wok and stir-fry. Make sure that all ingredients are well blended. Continue to stir-fry for 5 to 8 minutes.
  • Transfer the danggit fried rice in a plate. Top with chopped green onions.
  • Serve. Share and enjoy!
