Danggit Fried Rice is a simple fried rice version composed of garlic, cooked white rice, and chopped dried danggit, which is also known as rabbitfish. I must say that this is a very tasty fried rice version that you can eat with other fried Filipino breakfast favorites such as tocino, longganisa, or what have you.
As for me, I thought of having this with fried eggs at first. However, I just remembered that I had danggit silog the other day. Not that I am picky, but I want my meal to be a bit different. So, I decided to eat this the way I enjoy pancit habab best โ with spicy vinegar. Danggit fried rice is already a meal by itself. Adding a few drops of vinegar made it taste better. How simple can it get?
I think that this fried rice version is also perfect when eaten with steamed or fried fish. I was able to try this with steamed and fried tilapia before, and I enjoyed both meals. Filipino omelet is another dish that I think is a best fit โ you know โ scrambled eggs with tomato and onion.
If you enjoyed Tuyo fried rice then I am sure that you will also enjoy this fried rice version.
