A strong contender for everyone’s favorite part of the most important meal of the day, pancakes are a breakfast staple. The all too appealing visual of stacks of pillowy, fluffy goodness is one hard to pass up. When you top them, too, with maple syrup and butter, you have a perfect breakfast feast! But pancakes simply wouldn’t be complete without the presence of crispy, crunchy bacon. These thin strips of pork can brighten up anyone’s morning, young or old. But what if we told you there was a way to make your breakfast (or even breakfast for dinner) even more memorable? Enter the bacon stuffed pancake — everything you love about breakfast rolled into one perfect bite!

It’s very common to serve pancakes alongside a generous portion of bacon for breakfast. The striking contrast between sweet and savory always makes your first meal of the day all the more enjoyable. And these bacon stuffed pancakes take this contrast to a whole new level! Instead of just eating these dishes side by side, why not have their delicious flavors explode in your mouth at the same time? What do I serve with my bacon stuffed pancake?

Like we mentioned earlier, and like you probably already know, breakfast is the most important meal of the day. It’s all too important that whatever you eat is enough to fuel you and help you start your day right! Your bacon stuffed pancakes are delicious, sure. But if you want the full breakfast experience, there are other dishes you can eat with it that can help make an even more filling and satisfying morning! Here are some Filipino and international breakfast favorites to start off your day right.

Tortilla Espanola (Spanish Potato Omelet)

What breakfast would be complete without eggs, right? People love their eggs done in so many different ways, whether scrambled or sunny side up, poached or even hard boiled. But at breakfast stations in hotels around the country, the omelet station is always packed with customers waiting for their delicious egg fix. With your bacon stuffed pancake, this tortilla espanola, or Spanish potato omelet, will surely hit the spot! Yummy, hearty potatoes and sharp but tasty onions mix together with light and fluffy eggs to create the ultimate breakfast omelet. Even better is that this recipe is so easy, you’ll have a full breakfast ready in only 20 minutes!

Bacon Stuffed Pancake Recipe

A classic Filipino breakfast, too, would be none other than the popular –silog combination! Here, you can take your viand of choice and pair it with delicious and perfectly cooked eggs and savory, fragrant garlic rice. These viands can take many forms. Whether you like the savory notes of tapa or something sweeter like tocino or longganisa, there’s a silog meal for everyone! And with a piece or two of bacon stuffed pancakes, you may even be full until after lunch!

Champorado with Tuyo

Now here is a Filipino breakfast classic! For those who like breakfast sweet and soupy, there’s just no better option than a wholly delicious champorado! This chocolate porridge combines our favorite grain, rice, with decadent tablea. Just like our bacon stuffed pancakes, this dish has an element of contrast too — evident in the presence of salty, dried fish! Tuyo cuts through the rich flavors of your chocolate porridge, making your dish feel even more complete. Opposites attract has never been clearer! 

How to cook bacon stuffed pancake

Let’s cook this bacon stuffed pancake together! Easy and convenient, this dish will have your perfect breakfast ready in no time! To make this dish even simpler to prepare, you can simply forgo making your pancakes from scratch and rely on good old pancake mix for that fluffy goodness.

First, however, you’ll need to work on your bacon! To do this, heat a tablespoon of cooking oil in a pan and cook 5 strips of your CDO Young Pork Bacon. Make sure that you’re keeping your heat on a low to medium setting for a slow but steady cooking process. Once it’s crispy, you can turn your bacon over, doing the same to the opposite side. When you’re happy with your bacon’s crispiness, remove your bacon from the pan and chop it up into smaller pieces. Set it aside.

Pancake with Bacon

Start on your pancakes by combining all your pancake batter ingredients in a mixing bowl! These include a cup of your pancake mix, one egg, ¾ water, and a tablespoon of canola oil. Mix your ingredients well with a wire whisk to ensure you’ve incorporated all the ingredients well. Next, heat up a clean, non-stick pan and spread a tablespoon of canola oil across it. Scoop up around 6 tablespoons of your pancake batter and pour it into the pan. And to give it your bacon stuffed pancake twist, top it with some of your crispy bacon slices!

Once you see your pancake start to bubble on top, give it a flip and continue cooking for 30 seconds to 1 minute. When the pancake slides across the pan when you shake it, you’ll know that it’s ready to serve! Transfer your piece to a serving plate. Continue to cook all your pancakes until you’ve consumed the entire batter!

Ingredients

  • 5 strips CDO Young Pork Bacon

Pancake batter ingredients:

  • 1 cup pancake mix
  • 1 egg
  • 3/4 water
  • 1 tablespoon canola oil
US Customary – Metric

Instructions

  • Heat around 1 tablespoon of cooking oil in a pan. Cook one side of the CDO young Pork Bacon until it becomes crispy (Note: use low to medium heat setting). Turn the bacon over and do the same to the opposite side. Remove the bacon and chop into smaller pieces. Set aside.
  • Combine all the pancake batter ingredients in a mixing bowl. Mix well usinng a wire whisk.
  • Heat a clean non-stick pan and spread around 1 tablespoon of canolaoil.
  • Scoop around 6 tablespoons of pancake batter and pour it into the pan. Top with some bacon sliced.
  • Flip the pancake once you see bubbling on top. Continue cooking for 30 seconds to 1 minute. You will know that you are done when the pancake slides freely when you shake the pan. Transfer to a serving plate. Do the same step until the entire pancake batter is consumed.
  • Serve with extra CDO Young Pork Bacon on the side. Enjoy with your favorite drink for breakfast.
