Soy sauce, onions, salt, pepper, calamansi– these are a couple of ingredients you may commonly find in most classic Filipino viands. And the appeal definitely resonates well with us as these truly go well with a great deal of dishes, blending perfectly with savory flavors. It makes sense then for these much-favored seasonings and spices to come together in one recipe. Beefsteak, more fondly known as Bistek, utilizes this beautiful combination. But today, weโll be exploring Pork Steak, which is a twist on that original recipe in using succulent pork chops as its meat.

If youโve already gotten a taste of Bistek, you would probably be aware of its unmistakably delicious saltiness and mild tang. But these flavors also go incredibly well with the pork chop cut, which are more affordable. Moreover, these are milder in taste than beef, which gives our tasty seasonings more of a chance to shine.
And another advantage to trying to make your own Pork Steak? The steps are quick and simple, and can serve as a fantastic starter dish for a beginner cook. If youโre only starting to learn how to cook, donโt let yourself get intimidated. Grab an apron so we can start making this meaty, juicy dish!
How To Cook Pork Chop Steak
- Marinate the pork chops – First, combine 4 pieces of pork chops with 5 tablespoons of soy sauce and the juice from 2 pieces of lime or calamansi in a large bowl or resealable bag. The soy sauce adds a salty and umami flavor, while the lime juice provides acidity that balances the richness of the pork. Marinate the pork for at least 1 hour; for best results, consider marinating it overnight. This allows the flavors to deeply penetrate the meat, resulting in a more flavorful and tender pork chop steak.
- Sear the pork chops – Next, heat a pan and add ยฝ cup of cooking oil. Once the oil is hot and shimmering, carefully place the marinated pork chops into the pan. Pan-fry the pork over medium heat for about 3 minutes on each side. This cooking method creates a lovely golden-brown crust while locking in moisture. Be cautious not to overcrowd the pan; cook in batches if necessary to ensure even cooking and browning.
- Simmer until tender – After frying, remove any excess oil from the pan to prevent the dish from becoming greasy. Pour in the remaining marinade along with 1 ยฝ cups of water, then bring the mixture to a rolling boil. Reduce the heat and let it simmer for about 45 minutes. This slow cooking allows the pork to become tender and absorb the flavors of the sauce. Check occasionally and add more water if needed to keep the pork chops submerged and prevent drying out.
- Season and add the onions – Once the pork is tender, add ยฝ teaspoon of granulated white sugar, salt, and pepper to taste. Stir well to incorporate these seasonings, which balance the dishโs flavors. Then, introduce 2 sliced white onions into the pan and cook for an additional 3 minutes. The onions will soften and caramelize slightly, enhancing the sauceโs richness and adding a layer of sweetness to your pork chop steak.
- Serve with rice – Finally, turn off the heat and carefully transfer the pork chops to a serving plate, ensuring to drizzle some of the sauce over the top for added flavor. Garnish with the cooked onions for an appealing presentation. Serve and enjoy the savory flavors of your homemade pork chop steak!
Tips and Tricks
In Place of Soy Sauce
“Tamari” is a great option in this pork chop steak recipe because itโs also made from soybeans and is gluten-free, though some brands may contain wheat, so check the label. You can use it in the same amount as soy sauce.
Another common substitute is Worcestershire sauce, which is also gluten-free but has a different flavor and less saltiness. If youโre allergic to seafood, be aware that Worcestershire sauce contains anchovies and shellfish. You might need to use a bit more Worcestershire sauce to match the saltiness of soy sauce.
In Place of Calamansi
If you can’t get calamansi, limes work as a good substitute in our steak recipe today. If limes are also unavailable, lemons can add a refreshing citrus kick. For a closer match to calamansi’s tang, mix 1 part orange juice with 3 parts lemon juice!

Thanks for the recipe! This was so good! I doubled the meat and the soy sauce and reduced the water to 1 cup and added some garlic as well. I feel like I could still have kept the soy sauce to 5 tbsp for 8 pork chops and it still would have been fine, but may not be as flavorful? I simmered for 55 minutes as I kept going back and forth on how low the heat should be. At any case, thanks again! Would definitely be making it again.
