Thankfully, this Chicken Macaroni Salad recipe will give you and your family a refreshing, delicious treat –– a creamy delight for all ages.

Father's Day Chicken Macaroni Salad

This Chicken Macaroni Salad was actually made by me and my daughter during Father’s Day. There are very few things that are more enjoyable than spending some family bonding time in the kitchen. Even better than watching my family enjoy something I make is being able to make it with them! Not only do we get yummy recipes, but we also get to create beautiful memories that I’m sure I’ll cherish, especially once my children have a family of their own.

The creaminess of a good Chicken Macaroni Salad is driven by the pleasant, clean flavors of a good mayonnaise. For this recipe, my daughter and I used 15 ounces of Lady’s Choice Real Mayonnaise to attain that desirable and yummy taste. The mild tanginess of mayonnaise pairs greatly with all the other ingredients in this Chicken Macaroni Salad. An assortment of carrots, onions, sweet pickle relish, pineapples, cheddar cheese, and sugar all come together harmoniously for a salad that’s light, fruity, and flavorful! A myriad of tastes and joy await you when you prepare this with your loved ones.

Chicken Macaroni Salad Recipe

On Father’s Day, I enjoyed this Chicken Macaroni Salad with a creamy spaghetti dish and a juicy, flavorful Grilled Liempo with Barbecue Sauce. Indeed, this salad’s light and rich flavor complements a nice and smoky slab of meat perfectly. Another popular combo is Chicken Macaroni Salad with a crispy, golden brown fried chicken. This gorgeous meat pairs perfectly with the creamy salad that cuts through the salty taste. 

But another great thing about this dish is how well it works as a standalone! With its varying ingredients and large stock of nutrients, this dish is filling enough to satisfy an empty stomach alone.

Chicken Macaroni Salad is a staple at many holiday potlucks as well; family members young and old can’t get enough of its creaminess! No matter what dish you’re having it with, it’s sure to be a success.

Chicken Macaroni Salad Recipe Ingredients

While this recipe involves ingredients like carrots, onions, and pineapples, you’re free to tweak this chicken macaroni salad according to your preference. One way to do that is by adding or removing ingredients according to taste! If you like raisins or green bell pepper in your salad, don’t hesitate to add it, too! If you’ve got a family member who likes to turn up the heat? Add a few pimientos for that extra spice! The possibilities are endless!

Chicken Macaroni Salad is a fun dish for your whole family to prepare, especially because you’re able to incorporate everything you love in one hearty, delightful dish.

How to Make Chicken Macaroni Salad

Let’s make this Father’s Day Chicken Macaroni Salad together! To prep your ingredients, first mince a quarter cup of carrots, as well as a tablespoon of onion. Be sure to dice 4 ounces of cheddar cheese as well. 

Easy Chicken Macaroni Salad

With that out of the way, you can start cooking your macaroni salad immediately. In boiling water, cook your macaroni according to package instructions, then set it aside. Then, in a clean pot, boil 6 ounces of chicken breast in 3 cups of water. This process should take about 30 minutes. Once that time is up, remove the chicken from the pot and let it cool down. Shred it into bite sized pieces, then set it aside.

Now, it’s time you prepare the rest of your Chicken Macaroni Salad’s ingredients! In a large bowl, combine your chicken, macaroni, carrots, onion, and pineapple tidbits. Included, too, are your sweet pickle relish tablespoons (you’ll need 4) and cheddar cheese pieces! After pouring in your 15 ounces of Lady’s Choice Real Mayonnaise, season your Chicken Macaroni Salad with 2 teaspoons of sugar, and salt and pepper. Fold this into each other, making sure to blend and mix all the ingredients well.

Cover the bowl with a plastic cling wrap and toss it in the fridge for an hour. Once it’s cooled down (and you’ve finished cooking the rest of your dishes), it’s now ready to serve! Enjoy this chilled and sweet Chicken Macaroni Salad treat! I’m sure that your kids and whole family will definitely love it.

Father’s Day Chicken Macaroni Salad

Ingredients

  • 15 ounces Lady’s Choice Real Mayonnaise
  • 6 ounces chicken breast
  • 7 ounces elbow macaroni
  • 1/4 cup carrots minced
  • 1 tablespoon onion minced
  • 4 tablespoons sweet pickle relish
  • 3/4 cup pineapple tidbits
  • 4 ounces cheddar cheese diced
  • 2 teaspoons sugar
  • Salt and ground black pepper to taste

Instructions

  • Cook macaroni based on package instructions. Set aside.
  • Boil chicken in 3 cups of water for 30 minutes. Remove from the pot and let it cool down. Shred the chicken afterwards and set aside.
  • Combine all the ingredients in a large bowl. Add Lady’s Choice Real Mayonnaise and season with sugar, salt, and ground black pepper. Fold until all ingredients are well blended.
  • Cover the bowl and refrigerate for at least 1 hour.
  • Serve chilled. Share and enjoy!
