Spaghetti Carbonara or Pasta alla Carbonara is a pasta dish with white sauce originally derived from beaten eggs and grated cheese. As the dish became popular, different versions came into being including the creamy version that employs heavy whipping cream.
This carbonara recipe that we have has a richer and creamier sauce base compared to the original Italian version. If you will notice, I did not include salt and black pepper in the list of ingredients. The saltiness of the bacon and parmesan cheese is enough to bring flavor to the dish. If you feel like adding a little more flavor and spice, please feel free to do so. Chicken carbonara is another version that you should take a look at.

One more tip, instead of using Spaghetti Noodles, try using Spinach Fettuccini. The color blending of the white sauce and the green noodles was really nice and appetizing and it’s healthy because it’s made out of spinach.

i tried cooking this just now..I totally messed it up coz i made the sauce in “medium” heat setting.it started to curdle..i ended up with an omelette looking sauce! ive to redo it over again..so i was left with little cream the second time i try to salvaged my dish, nevertheless it still ended up tasting really great,i sticked with the 4 eggs recipe, little cream though not 3/4 cups anymore coz i used d rest of the cream with the first sauce that i messed,i spiked a teenie weenie pork cube though, for some reason i was afraid id mess it up again and end up with a bland tasting pasta,it tasted good. next time id try omitting d cube and just work plainly with the cream and eggs..but what i ended up with my finale turned out really good.. 🙂
shoogie woogie says
when u toss in the pasta with the egg mixture,be sure to turn down the heat to “low” setting..it curdles,u don’t wanna end up like me who made an omelette out of the sauce hehe..

Hey, Vanjo. Heard your cooking website from a friend. He said he learned how to cook because of your website. I’m presently working my ass off here in Saudi Arabia. Good to know we’re in the same field -- IT. All the more I’m encouraged to learn cooking. Well done!

hi good day po chef vanjo they dont have parmesan cheese in my province only eden quick melted cheese is it ok for carbonara, please reply po cause i will try your recipe this new year thank you po and godbless
Vanjo Merano says
You can always use any cheese that you have. However, Parmesan is the most recommended. If you have edam cheese (this is also known as queso de bola), it will be better compared to quickmelt or any artificial cheeses. Hoe this helps 🙂
