Pinangat na Isda Recipe

Pinangat na Isda is a Filipino Fish dish. There are two popular versions of Pinangat: the sour version using bilimbi (kamias); and the Bicol version with gata. This recipe is the sour version.

Pinangat na Isda is one of the simple Filipino Food that I like eating. There is nothing fancy about this dish, yet I enjoy having it. Maybe it is because of its natural flavor that relaxes my taste buds — or perhaps the nostalgia that it brings.

Cooking pinangat is very easy. How easy? Let’s just say that it is way to easy compared to frying an egg. All you need to do is combine all the ingredients and cook them all at once. Simple, isn’t it?

Fish Escabeche Recipe

Escabeche is a type of sweet and sour fish recipe.

There are many version of Escabeche around. This version that we have here is probably the most simple of all. However, the taste will not be as simple as it seems because this recipe has all the good flavors in it.

Not to be mistaken as Ceviche — which is a South American favorite that makes use of raw fish — like kilawin. Filipino Escabeche requires the fish to be fried and cooked in vinegar.

Mixed Seafood in Coconut Milk Recipe

The Philippines is famous for dishes that use coconut milk. This method of cooking is locally referred to as “Ginataan or Guinataan”, which means to cook in coconut milk.

There are many famous regional dishes that make use coconut milk. Laing, Bicol express, Ginataang Tilapia, Ginataang Manok, Binignit, and Ginataang Mais are some of the popular ones.

Mixed Seafood in Coconut milk is a combination of different seafoods such as crabs, mussels, shrimp, and squid — all cooked in coconut milk or coconut cream. Although it might sound simple, this recipe really tastes good.

Ginataang Sitaw at Kalabasa with Crabs Recipe

Ginataang Sitaw at Kalabasa is a vegetable dish composed of Calabaza squash and string beans.

The vegetables are cooked in coconut milk or coconut cream. Different kinds of seafood — sometimes meat is used to cook this dish to add more flavor.

There are many different variations of Ginataang Sitaw at Kalabasa, but this one is my favorite — because of the crabs. I like this dish better with alimasag (blue crabs); the flavor of the crabs blends well with the vegetables and coconut milk.

Tuna Casserole Recipe

Here is a delicious dish that you can serve during lent: Tuna Casserole.

This tuna pasta recipe is quick and easy to prepare. All you need to do is mix the ingrdients and then bake. Most of the ingredients for this recipe are common. You can easily find them in your favorite grocery.

I like this dish because it is rich and creamy. The flavor of tuna blends well with the other ingredients. I also like the crunch that the french fried onion brings.

Grilled Tilapia Recipe

Grilled Tilapia is one of my favorite Tilapia Recipe. There are many ways to grill tilapia; this variation requires the fish to be wrapped securely in aluminum foil to trap the juice producing a very flavorful grilled fish with a texture similar to steamed fish.

Another common method of grilling tilapia is by placing the fish directly in a grill without any wrapper. Scales are not removed from the fish to prevent the skin from sticking on the grill.

There is also a unique method of cooking that I witnessed when I went to the municipality of Taal in Batangas. A flat metal sheet is heated-up then the newly caught fish is directly placed on top of the sheet. It may sound more like searing rather than grilling. The result was fantastic. The texture is similar to fried tilapia without being oily.

Crispy Adobo Flakes Recipe

I like to eat garlic fried rice in the morning. Dishes like Tapsilog and Longsilog excite me. There are times when I want to keep it simple by having sinangag na dilis with my fried rice along with some spicy vinegar dip (sinamak). There are even times when I want something unique, something that I’ve never had for a long time.

Crispy Adobo Flakes is one of the dishes that I am referring. If I want to have Crispy Adobo flakes, I should plan ahead for it. Well…even if there is a plan, it does not happen the entire time. I have the tendency to lose control by eating the adobo before they turn into crispy flakes – but not this time. I made sure that I document the steps so that you too can make your own for breakfast.

Baked Tilapia with Grilled Pineapple Salsa

Aside from the different seafood, this dish tasted perfect because of the type of rice and saffron used. Using seasoned yellow rice brings in a lot of good flavor, while the Spanish saffron (which is considered as one of the most expensive spices) improves the taste and aroma of the dish.

Tandoori Chicken Recipe

Tandoori Chicken or Chicken Tandoori is a famous Indian chicken dish. Skinned chicken slices are marinated in yogurt and several spices for long hours before being grilled or roasted.

Instead of serving the spinach in a separate plate, it is better to mix it with the beef so that it doesn’t get ignored.

Jennifer’s Breaded Chicken with Mango Sauce

This recipe makes a dish similar to sweet and sour chicken. My husband loves mango juice. One time he picked up the wrong bottle at the store that turned out to be mango sauce. He realized rather quickly mango sauce is not for drinking. I tried using it in a few recipes and, especially in this recipe, we both love it!

Sizzling Pork Chop Recipe

I was thinking about food court foods the other day. I’m not sure why that thought came into my mind then I realized that I’m craving for Sizzling Pork Chop. This is what I usually order for lunch every time I’m in the food court.

Sizzling Pork Chop tastes good and is easy to prepare. The sizzling effect makes this dish more appealing. Aside from the pork chop, mixed vegetables, yellow rice, and gravy are necessary to complete this dish. For the vegetables, I used the fresh frozen mixed vegetables. I placed it in the microwave oven for 2 minutes to cook a little. I was able to come-up with great tasting yellow rice by combining steamed rice with margarine, garlic powder, salt, and a little paprika.

I want to write more about this dish but I can’t resist its inviting aroma. I better start eating while the plate is still hot. Happy cooking!

Paksiw na Isda Recipe

Paksiw is a term used to refer to dishes cooked in vinegar and garlic. This could pertain to meats like pork (Paksiw na Pata and Lechon Paksiw are some of the examples) and seafood.

Paksiw na Isda or Fish Cooked in Vinegar is a quick and easy seafood dish that is said to be one of the common everyday dishes prepared by Filipino families. Since the Philippines is composed of over 7,100 islands, fish is a staple particularly on the coastal areas.

Bangus or Milkfish has been the regular fish variety for this dish (Paksiw na Bangus). However, due to availability, budget reasons, and personal preference, other fish varieties can be used.

I grew-up ignoring this dish. When my mom serves this for lunch or dinner, I would go straight to the pantry and open a can of ma-ling (a brand of Chinese luncheon meat) or corned beef for myself. I guess that my taste buds are configured for fried meat and sweet foods when I was a kid; I’m sure that most of you can relate.

As time passed-by, I learned to appreciate simple dishes; fish and vegetables slowly became part of my regular diet. I guess all I needed was enough time to adjust. It’s about time or else I wouldn’t have had experienced the pleasures in trying different Filipino Food.
