Potato Croquettes are crunchy on the outside, soft and creamy on the inside, and perfect for pairing with just about anything from ketchup to gravy. These are a staple in many Filipino homes, especially when you want to make the most out of basic ingredients. Let me walk you through how to make this simple yet crowd-pleasing recipe at home.

Potato Croquette

What is Potato Croquette?

Potato Croquettes are breaded and fried mashed potato cylinders or patties that are soft inside and crispy outside. They are originally from Europe and have become popular around the world as a snack, appetizer, or side dish. In many homes, they are a clever and delicious way to use up leftover mashed potatoes.

Ingredients for Potato Croquette

  • Mashed potato: Use cold, firm mashed potatoes to help hold the shape when forming croquettes.
  • Egg yolk: Adds richness and helps bind the mashed potatoes together.
  • Salt: Enhances the flavor of the potato mixture.
  • Ground black pepper: Provides a mild heat and savory depth.
  • All-purpose flour: Used to lightly coat the croquettes before dipping in egg.
  • Egg: Helps the breadcrumbs stick and creates a golden crust.
  • Breadcrumbs: Gives the croquettes their crispy and satisfying exterior.
  • Cooking oil: Used for deep frying the croquettes until they are golden brown.

How to Cook Potato Croquette

  1. Make the filling
Place your cold mashed potatoes in a mixing bowl. Add the egg yolk, salt, and ground black pepper. Mix everything well until fully combined. The mixture should be firm and easy to shape. If it is too soft, chill it for 15 to 20 minutes before shaping.
  2. Form the croquettes
Scoop about two tablespoons of the mixture and shape into a small log or ball. Repeat the process until all the mixture is used up.
  3. Coat each piece
Dredge each croquette in flour, then dip in beaten egg, and finally roll in breadcrumbs. Make sure each piece is fully coated. This will give the croquettes their crispy shell.
  4. Chill before frying
Place the breaded croquettes on a tray and refrigerate for at least 20 minutes. Chilling helps the croquettes hold their shape and prevents them from falling apart during frying.
  5. Fry until golden
Heat cooking oil in a deep pan over medium heat. Once the oil is hot, carefully place the croquettes into the pan. Fry in batches for about 2 to 3 minutes or until golden brown. Turn occasionally for even cooking.
  6. Drain and serve
Remove the croquettes from the oil and place them on a paper towel lined plate to drain excess oil. Let them cool slightly before serving.

Useful Tips

    • Use firm mashed potatoes
Cold mashed potatoes that have been chilled in the refrigerator hold their shape better and are easier to handle.

    • Chill before frying
This step is important. Cold croquettes are less likely to break apart in the oil.

    • Use the right oil temperature
Fry over medium heat. If the oil is too hot, the croquettes will brown too quickly. If it is too cold, they will absorb oil and turn soggy.

    • Try baking or air-frying
For a healthier version, bake them at 400ยฐF for 15 to 18 minutes or air-fry at 375ยฐF for 12 to 15 minutes. Spray with a little oil for better color.

    • Experiment with seasonings
Add garlic powder, onion powder, or dried herbs to the mashed potato mixture to create your own variation.

Best Ways to Enjoy Potato Croquette

Potato Croquettes are best served warm and crispy. They go well with a wide range of dipping sauces like ketchup, garlic mayo, sweet chili sauce, or even brown gravy. You can also enjoy them as a side dish for lunch or dinner, or serve them on their own for a quick snack or merienda.

They make great additions to bento boxes, party platters, or even as a breakfast item next to eggs and longganisa. Since they are made from simple ingredients, they are incredibly versatile and easy to pair with other savory dishes.

We used to make this when I was younger ๐Ÿ™‚ but we put ground pork filling in the middle of the mashed potato balls. This is one of my comfort foods. My husband has been learning to cook Filipino food and he has gotten a lot of good recipes from here. Thank you so much!
